  • Enter the workshop of Alice, a passionate artisan baker, and discover with her the secrets of making organic sourdough brioche.

    First, she will teach you the basics of sourdough, an artisanal know-how that makes breads and brioches so tasty, digestible and full of nutritional benefits.

    She will then explain the specificities of sourdough for brioche, which brings a depth of flavour to the brioche without acidity.

    Then, she will share the techniques of kneading brioche for a soft and delicious crumb, giving you tips on how to easily reproduce the gestures at home.

    You will also learn several shaping techniques (ball, braid) and how to add ingredients to the brioche to vary the pleasures! During the workshop you will be able to taste tea, coffee, home-made kefir and a delicious brioche baked together.

    And you will leave with a jar of sourdough, recipe cards and your own brioche to bake at home and eat!

    Workshop location

    Alice's workshop in Ixelles, just a stone's throw away from Tenbosch Park and accessible by tram.

    This place is not accessible to people with reduced mobility.

    Meet Alice

    Baker

    Alice worked in a large cosmetics company before discovering sourdough baking, first as a hobby and then as a passion that finally became a driving force for changing her career.

    She therefore decided to train at the International Bakery School in the South of France, which specialises in artisanal sourdough methods. She launched her first workshops and the pandemic period then led to a real craze for her area of baking.

    This was an opportunity for her to create a network and go to the United States to complete her training at the San Francisco Baking Institute. There, she broadened her knowledge and experience in the different leavens and types of bread (special breads and buns).

    Back in Belgium in 2021, she passed her baker's exams and then relaunched her workshops with more advanced modules and that's when it all took off!

    Always eager to share her hobby, her experience and give everyone the chance to introduce a bit of magic back into their daily life with decent, healthy products, she can't wait to welcome you to her workshop for a unique experience!

    Atelier vraiment très intéressant et agréable à suivre avec Alice dans une ambiance conviale! La mise en pratique des différentes étapes de la préparation de brioches avec toutes les explications d'Alice et les réponses aux questions des participants sont une première étape parfaite avant d'en préparer chez soi! Merci encore à Alice pour cette matinée intéressante et délassante!
