  • Get ready to thrill your taste buds with Anaïs! 

    For 2,5 hours, you will have the opportunity to learn or perfect your basic baking techniques. You will be supported in your cake making adventure as you make some wonderful seasonal tarts. 

    You will start with an explanation of the basics of pastry making and the different utensils you will use during the session. 

    Then, you will start with the different recipes and techniques such as how to line a tart or making and piping a creamy ganache or the creation of a seasonal mousse. 

    Depending on the season, the recipes will change, but your tarts will always be delicious, that's for sure! 

    You will finish your creation with an elegant floral decoration, worthy of the greatest cake shop! 

    Anaïs will be there to accompany you throughout the workshop. 

    You will leave with two floral tarts and, most importantly, lots of new techniques you can use unstintingly.

    Workshop location

    Anaïs' workshop is a ten-minute walk from the Vanderkindere (Tram 4) or Albert (Tram 3) stop.

    This place is not accessible to people with reduced mobility.

    Meet Anaïs

    Pastry Chef

    Anaïs has been passionate about baking since she was a young child! After a career as a landscape architect, she embarked upon a path of gourmandise to bring her sweet inspirations to life. She's undergone various types of training, including a lengthy internship at Marc Ducobu in Waterloo. In August 2014, the talented pastry chef launched Cokoa, a small production workshop in Ixelles where creation, flavours and experience are the key words! Young and old alike can enjoy a seasonal treat, thanks to wholesome products that are carefully and lovingly prepared. Her sparkling personality comes through in her delicate creations, where pastries and flowers intermingle to make sweet treats that are as beautiful as they are delicious. In September 2021, she continued the expansion of her business with a pastry academy called Cokoa lab', where she passes on her passion. It's a spacious 80 m² workshop with a large garden for enjoying the sun. Anaïs, along with International pastry chefs and expert artisans, creatively lead fun and friendly sessions around the subject of pastries.
