  • Fancy working with a passionate artisan who selects the very best beans and wants to teach others his expert knowledge while introducing you to his delicious chocolate bars? Then you're in the right place!



    First, Alain will explain his approach and his commitments, as well as the whole history of cocoa! Alain creates his chocolate starting with the bean itself and will go into detail about the different stages of processing right from the field to his workshop, where he takes you through the final stages of roasting, crushing, grinding, tempering and moulding.



    Then it's over to you to roll up your sleeves! After an introduction to traditional chocolate tempering techniques, you will work with the tempering machine to mould chocolate bars. Once perfected, it's time to mould your own bars and get creative with Alain's wide selection of flower petals, nuts, buckwheat, bean sprinkles, caraway, dried fruit, fennel, and more. Alain will help you with coming up with the best pairings and those you enjoy most while imparting all a chocolate-maker's classic secrets.



    You will leave this workshop with your own 4 chocolate bars and lots of new skills.



    This workshop can be conducted in French, English and Dutch simultaneously depending on the participants.

    Meet Alain

    Chocolate Maker

    In the Brusselian dialect, "Bomma" means grandmother, and "Flora" is the name of the co-founder's beloved granny, who passed on her love of cooking to her grandson, Alain. Following in Flora's footsteps, the chocolate factory strives to be responsible, generous and open, working with local plants to create new flavours.

    Bomma Flora represents a shared adventure between Alain and Bernard, his brother, who planted the seed that grew into a chocolate business. 

    Bernard lives in Nicaragua and has spent the last few years working for an NGO that supports sustainable development projects. As part of his job, he participated in the Paris Salon du Chocolat alongside local producers, gaining a fascinating insight into the opportunities on offer in the cocoa industry. It was here that Alain had his first real chocolate tasting experience. He soon realised that there were an infinite number of delicious varieties to discover and began to consider making chocolate his profession. 

    Previously, Alain worked at the Université Libre de Bruxelles as an instructor in land use and urban planning. At the age of 50, he decided to embark on an entrepreneurial adventure. After two years of training as an chocolate maker and two internships, he decided to create his own responsible, circular and certified organic chocolate factory. He selects and imports the cocoa beans himself and is personally responsible for every stage of the production process.

    Alain likes to play with plants, creating infusions and combining them with chocolate to create exciting flavours (chocolate bars with meadowsweet or fennel, pralines with lilac or elderflower) and colours (white chocolate with turmeric or spirulina)!

    He also follows a zero-waste approach, working with biosourced packaging and creating every delicacy from raw ingredients, including chocolates, pralines, ganache truffles, caramels, jellies, and more. 

    Today, Alain wants everyone to experience the very best and try their hand at chocolate making! He is excited to welcome you to his workshop, which he shares with Bram, a Wecandoo roaster! 

    Alain's Belgian chocolate factory is the ideal destination to deepen your appreciation of native plants and quality chocolate.

    Très chouette atelier dans une ambiance très sympathique ! Alain a très bien su partager sa passion et nous emmener de façon claire dans l’univers du chocolat. Les étapes sont expliquées de façon précise et pas à pas. Le couronnement de cet atelier étant que chaque participant peut fabriquer sa propre tablette sous le regard et les conseils avisés d’Alain. Atelier à recommander sans hésitation aux amateurs de chocolat!

    Atelier super sympa ! Bonne ambiance, des explications claires et on repart avec de belles tablettes de chocolat qu'on a hâte de déguster ! Merci à Alain pour cet atelier, je recommande vivement !

    Très chouette atelier avec Alain, qui nous partage sa passion et son expérience avec enthousiasme. Nous avons appris beaucoup de choses et sommes heureux d'avoir pu mettre la main à la pâte en fabriquant notre propre tablette. Nous avons également apprécié le fait qu'il rende la confection du chocolat accessible à toutes et tous, en donnant des conseils en termes de matériel et techniques réalistes, disponibles chez soi pour des non-professionnels.     Très bon atelier. Les explications sont claires et intéressantes. Alain nous met vraiment à l’aise pour réaliser la tablette de chocolat et nous partage son enthousiasme et sa passion pour le chocolat.

    Atelier didactique et très pratique. Après l'atelier, on se sent suffisamment à l'aise pour pouvoir refaire des tablettes de chocolat à la maison (y compris le tempérage du chocolat). L'artisan montre clairement les bons gestes à avoir, nous guide aussi quand c'est à notre tour de remplir le moule. Atelier très complet avec plus d'explications reçues par écrit au cours et un suivi ensuite par email. L'artisan partage sa connaissance et son savoir-faire avec une totale transparence afin que l'atielier nous soit utile par la suite, ce qui est très agréable. Je conseille le cours à tous les amateurs de chocolat qui désirent apprendre à faire des tablettes et pouvoir se débrouiller de façon autonome à la maison sans matériel trop complexe à trouver.
