Your own chocolate pralines
The workshop in detail
Fancy working with a passionate artisan who selects the very best beans and wants to teach others his expert knowledge while introducing you to his delicious pralines? Then you're in the right place!
First, Alain will explain his approach and his commitments, as well as the whole history of cocoa! Alain creates his chocolate starting with the bean itself and will go into detail about the different stages of processing right from the field to his workshop, where he takes you through the final stages of roasting, crushing, grinding, tempering and moulding.
Then it's over to you to roll up your sleeves! You will work with the tempering machine as you pour the chocolate into the praline moulds. Then you will make the filling: a ganache with the flavour of your choice, including elderflower, peppermint, etc., plus a fruit jelly. You will focus on fillings that don't require special equipment and are therefore easy to make at home.
Then it's time to fill the chocolates with the filling you have just made by combining the flavours. Alain will help you with coming up with the best pairings and those you enjoy most while imparting all a chocolate-maker's classic secrets.
You will then proceed to the last step, known as "talonnage", i.e. sealing the chocolates with chocolate. You will leave this workshop with 250 grams of chocolates and lots of new skills!
This workshop can be conducted in French, English and Dutch simultaneously depending on the participants.

Expérience super enrichissante, explications pas à pas par Alain sur la création de praline d'excellente qualité, un passionné de cet artisanat. Zeer leuke en leerrijke ervaring! Alain praat met veel passie en kennis over zijn beroep en begeleidt de deelnemers stap per stap in het proces. En het resultaat is mooi en lekker 🙂
