  • Discover the origin of chocolatey delight with Elsa!

    During this 3-hour sensory adventure, you'll be immersed in the world of cocoa while creating your very own chocolate bars.

    Upon your arrival, the chocolatier will take pleasure in introducing you to her workshop. You'll then dive into the history of chocolate, learning about the principles of bean-to-bar, including bean selection, roasting methods, and much more.

    You'll take charge by cracking the beans to create cocoa nibs. This is where the experience becomes truly tactile!

    Using a mortar and pestle, you'll mix the cocoa nibs, cocoa butter, and sugar before pouring your chocolatey blend into moluds to bring your personalised bars to life.

    At the end of the workshop, you'll leave with two chocolate bars that you've crafted from start to finish and two tasting chocolate bars ! You'll not only have a delicious chocolatey reward but also the opportunity to become a true chocolate artisan.

    The studio is easily accessible by public transport.

    Meet Elsa, the passionate bean-to-bar chocolatier!

    For six years, Elsa made her home in Ecuador, immersing herself in the world of sustainable tourism. It was there that she organised journeys along the cocoa route, and her fascination with this product truly took shape.

    Upon returning to Europe, her passion for sustainable food led her to embark on a journey in the world of chocolate making. She pursued formal training at a renowned school of chocolate and confectionery. Elsa also honed her chocolate tasting skills through the International Institute of Chocolate and Cacao Tasting.

    After gaining valuable experience working alongside a well-known chocolatier, she decided to share her expertise with fellow chocolate enthusiasts. Eventually, she took a bold step and opened her own café dedicated entirely to cocoa.

    Elsa is a true expert in the bean-to-bar process. She sources her cocoa beans from suppliers who work directly with growers, overseeing every step of the process from roasting to cracking, and all the way through to chocolate production.

    Her mission is a noble one: to elevate the work of cocoa farmers and chocolate makers alike.

    Superbe atelier et superbes produits ! Nous avons fait l'atelier Bean to Bar avec Elsa et sommes ressortis enchantés. L'atelier est parfaitement constitué pour ravir les papilles, satisfaire la curiosité, et créer son propre chocolat depuis la fève de cacao. Elsa est super sympa, passionnée et généreuse. Véritablement un atelier dont la qualité sort de l'ordinaire. Nous avons aussi acheté une série de ses produits. Les pralines aux cacahuètes sont exceptionnels, tout comme les chocolats dont nous apprécions particulièrement celui des Philippines). Vous pouvez y aller les yeux fermés !

    Cet atelier de chocolat est unique en ce sens qu'il permet de fabriquer son propre chocolat, à partir de la fève. C'est magique de pouvoir transformer une fève durement torréfiée en une masse aussi liquide. On est ensuite très fier de son propre chocolat. Et sa passion pour le chocolat équitable vous fait respecter davantage chaque morceau de chocolat que vous mettez dans votre bouche. Je recommande vivement cette visite si vous voulez voir de vos propres yeux comment le chocolat est créé.

    Fabriquer mes propres tablettes en chocolat, bien sûr j'étais partante ! Mais cet atelier s'est révélé être bien plus que ça. Une rencontre tout d'abord, avec Elsa, qui transmet sa passion et son amour du cacao avec une gentillesse et une douceur infinie. Une redécouverte du chocolat mais aussi de la fève de cacao (je suis devenue accro aux infusions d'écorce de cacao). Un éveil des sens. Un moment de partage. Et puis bien sûr, l'apprentissage d'un savoir faire. A la fin de l'atelier je n'avais qu'une envie: fabriquer d'autres tablettes de chocolat chez moi et puis revenir pour un autre atelier ! Merci Elsa !
