The workshop in detail

  • 1h30
  • 18 years min.
  • 1 to 10 participants

Discover the unique flavours of the Ardèche with Clarisse and set off on a sensory journey through wines and local produce. During this workshop, you will learn how to pair the Château’s wines with regional specialities to create balanced and delicious combinations.

Workshop outline:

Wine presentation: Clarisse introduces the four “Les Confidentielles” cuvées, each with its own character and aromatic profile. You will discover the history of the Château, the estate’s philosophy and the key principles behind food and wine pairing.

Ardèche food specialities: each wine is paired with a typical Ardèche product, carefully selected from local producers who share the same farming values. Tapenade, artisan olive oil, Mangalitza ham… all gluten-free and served with crispbreads for an optimal tasting experience.

Paired tasting: start by tasting the wine on its own, then the food, and finally both together to appreciate their harmony. Clarisse explains why certain elements, such as sugar, can mask acidity, and shares insights into the subtle chemistry behind successful pairings.

Flexibility and personalisation: the workshop adapts to your preferences and needs. You are free to explore different pairings, ask questions and create your own ideal combinations.

Take this time to chat with Clarisse and the other participants, share your impressions and gain a deeper understanding of the richness of the Ardèche terroir and the art of food and wine pairing.
