Farmer
Amsterdam
Andres, a Colombian culinary expert based in Amsterdam, has traversed an unconventional path from chef to butcher and ultimately to farmer, driven by a vision to overhaul the global food paradigm.
His endeavour at De Stadsgroenteboer marks a commitment to ethical farming practices that respect both people and the planet.
Ingrained with his homeland's rich culinary heritage and his grandmother's wisdom, Andres champions the idea that food transcends mere nutrition. It acts as a universal language, binding diverse cultures. His global gastronomic pursuits, spanning Italy to Argentina, have not only refined his skills but have also shaped his philosophy on the importance of community and connection in food production.
Andres' shift to agriculture was a decisive step towards influencing how society values food. Settling in the Netherlands, a leading food exporter, he embraced farming with a vision to begin change where it matters most — at the source. De Stadsgroenteboer, although modest in size, is prolific, cultivating over 60 varieties of vegetables and a multitude of herbs through sustainable, bio-intensive methods that prioritise soil vitality.
Additionally, Andres has a venture, JARA, crafting salsas from surplus local farm produce. This initiative is not only a nod to his cultural heritage but also reinforces his dedication to a food economy that is sustainable, inclusive, and conscious of its environmental impact.
