  • Welcome to La Burrata Kaasmakerij, where Ornella and Roberto invite you to take part in a hands-on cheese-making workshop. 

    When you arrive, the artisans will greet you with a welcome drink. Roberto will then start heating the buffalo milk, a crucial step in the cheese-making process. Ornella and Roberto only use fresh buffalo milk from local organic farmers to ensure the authenticity and quality of their cheeses.

    Meanwhile, participants are given small containers of milk and, under guidance, add rennet, salt and starter cultures to start the fermentation process. Once the primo sale cheese is ready, you will move on to make ricotta di bufala, where Roberto will demonstrate how to heat the leftover serum to produce creamy ricotta.

    Finally you will enjoy a tasting of various cheeses such as mozzarella, burrata and stracciatella, paired with freshly baked bread.

    Cheesemaker

     Meet Ornella and Roberto, the proud owners of La Burrata Kaasmakerij. Ornella, originally from Campania, Italy, oversees both the administrative and production sides of the cheese factory. Working alongside her is Roberto, who hails from Puglia, Italy. A former veterinarian, Roberto found his passion in cheesemaking and now dedicates his time to creating the perfect burrata.

    Since moving to the Netherlands in 2019, Ornella and Roberto have been committed to using locally sourced ingredients in the production of their cheeses. Their cheeses are meticulously handmade using Dutch milk and traditional Italian techniques, resulting in a blend of cultures.

    In addition to cheese production, Ornella and Roberto have decided to organise workshops to meet cheese lovers and share their knowledge and passion for cheesemaking.

    Join Ornella and Roberto on their journey to bring the freshest burrata to the Dutch market and learn first-hand about the craftsmanship behind their delicious cheeses.
