    Here, at the renowned Van Tricht cheese-agers, you enter the exclusive tasting room. Glass panels offer a glimpse into Van Tricht's ripening cells, housing treasures of perfectly ripened cheeses. Under Marco's guidance, this workshop aims to unveil the diverse tapestry of beer styles alongside the art of cheese pairing. 

    For several generations, Kaasaffineurs Van Tricht has been the reference for artisanal cheeses. A favourite of star chefs and of any other restaurant that pays attention to delicious products. Van Tricht has long been a household name in the Benelux and today it is far beyond. As their slogan states, their cheeses are aged to perfection. 

    The tasting consists of a carefully curated selection of 10 Van Tricht cheeses, from creamy goat's milk to piquant blue-veined varieties. Each thoughtfully paired with, in total, five different types of beer. As the tasting progresses, guests are encouraged to explore the intricate interplay of flavours.

    Marco will share insights into the choice of beers and about the art of refining (maturing), so that beyond sheer enjoyment lies a deeper appreciation of the craftsmanship behind each cheese and beer.

    Zythologist (beer sommelier) en cheese-expert

    Marco de Waard completed the zythologist and beer sommelier courses in 2016, followed by a brewer and fermentation technician programme in 2019. In 2022, his passion for artisan cheeses also led him to start the two-year cheese master's program.

    His mission is to re-educate the palate of the beer drinker and introduce people to new styles of beer in combination with artisanal cheeses. Under the credo "it's not that you do not like beer, it's that you didn't discover the right style yet" Marco has collaborated with Kaasaffineurs Van Tricht to provide over 100 high-end beer and cheese pairings. 

    Through his tastings and workshops, Marco also wants to demystify the world of artisan beers and cheeses. He invites everyone to discover these true crafts.
